The BioSignals sensor also has 200 samples per second of BVP (heart rate). Perhaps you don't always have a good signal? Or you were just more stressed during that session / those sessions for some reason. Open a secondary graphing screen and choose the BVP Signal Quality Test screen. Take a look at ...

Yes, its' raw SCL. The units are uSiemens, but, and I can't explain why, there doesn't seem to be agreement between various devices about the uSiemens value for a human. I've seen different devices measure a fixed resistor to show the same resistance, but show very different readings on a body.
